Drunken Greens

  • yellow onion diced
  • 1lb bacon or sausage diced
  • 1 Tbsp olive oil
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp smoked paprika (not optional)
  • ½ tsp cayenne pepper (optional)
  • 1 can beer (optional)
  • 4 bunches or 2-4 lbs. of greens chopped (collards, mustard,
  • turnip, chard, beet, kale, young tender okra leaves or whatever you have)
  • 1 or 2 cups beef or chicken stock
  • Salt and pepper to taste


Add oil onions and meat to pot on medium high heat
Cook until onions just start to caramelize then add dry
Stir in thoroughly cook about 1 min
Add beer cook about 1 min
Add stock and as many greens as you can to about ¾ of the pot,
stir and cover about 5 min
Add the rest of greens in batches cooking down about 5 min a
batch until all the greens are in the pot
Simmer 30 min or as long as you want until all the greens
are tender.
